Hey friends! It's been awhile since I posted food articles, but hey, I'm here now! I kind of winged this penne pasta dish recently and it turned out delicious, so I'm sharing it on the blog! I've been really into chickpea and lentil pastas, which is a healthy choice for anyone who's trying to be healthy (ok... healthier). I hope you enjoy this arrabiata pulled pork penne pasta recipe!

Now, keep in mind, you can do this vegetarian, or with chicken, sausage, or meatballs. TBH I just saw pulled pork (pre-cooked) at the store & just rolled with it. But let me tell you - it didn't disappoint... and yes, it saved me lots of time being pre-cooked and I'm all about quick and easy. This dish only takes 15 min, and one pot means just one dish to clean. Hallelujah.
This recipe serves about 6, so if you're cooking for 2 like me, you'll definitely either have leftovers or you should invite some friends over to enjoy it with! We will probably freeze some for meal prep.
*serves 6 people
1 tbsp coconut or olive oil -- I use this ghee/coconut oil mixture
4 cloves of garlic, or just wing it like I do (nothing a little extra garlic can't hurt, in my opinion!)
1 tsp salt
1 tsp pepper
1 yellow onion, diced
1 yellow pepper/capsicum, diced
2-3 tbsp of Sriracha (i just freestyled a waffle shape, until it felt right!)
1 large can (27 oz / 500 ml) of diced tomatoes
1 large jar (20 oz / 600 ml) of tomato sauce
1.5 cups of water
Fresh basil, for garnish
Grated parmesan, optional
