paleo avocado fries


AvoMonsters sent me some of their fabulous and fresh avocados to try and they also challenged me to make the best Super Bowl Sunday #avoappetizer. I spent this weekend in Tahoe with some friends, and we definitely had our fair share of provisions, so I'm craving something healthy. But greasy and yummy appetizers are the the whole reason I look forward to Super Bowl Sunday, so I decided to make paleo avocado fries.

I took a recipe I found for crispy avocado fries and altered it to make it paleo friendly. Super easy to make! It takes 5 minutes to prep and 20 minutes to cook. Here's how it goes:

INGREDIENTS:

Serves 4 people

  • 4 large avocados, sliced

  • Juice of 1 whole lime (optional)

  • Salt + pepper

  • 1/8 cup coconut flour

  • 3 eggs, beaten

  • 2 cups flax meal

  • 2 tbsp coconut oil (or coconut oil spray)

RECIPE:

  1. Preheat oven to 400 degrees

  2. Grease an oven tray with coconut oil

  3. Squeeze lime into avocado slices to preserve their color while baking (optional)

  4. Roll avocado slices in the coconut flour, then dip in the egg and coat in flax meal (be generous with the flax meal to make sure they're fully coated)

  5. Place them in a single layer on the cooking sheet and grease with the remaining 1 tsp of the coconut oil (or spray with coconut oil)

  6. Bake for 15 minutes or until they are crispy and golden (can add more oil to help them cook as needed)

  7. Enjoy with your favorite dipping sauce!
