paleo chocolate chip cookies

I've been trying to stick to a paleo diet lately. (What is paleo? Read more here.) I did it for about a month and a half before my wedding and really enjoyed it, so have decided to stick with it for the time being. Not only did it help me to slim down a bit, but also gave me a lot more energy throughout the day - eating natural foods has made me feel so much better and doesn't bog me down. Although, now that the wedding is over and the fact that I'm obsessed with trying new restaurants make it difficult sticking to such a strict diet when I'm out to eat since I just want to try everything! So, I've just been focused on making everything in my kitchen paleo, so when I eat at home (which is most nights), I can try to be as healthy as possible.

Joe has a MAJOR sweet tooth, and occasionally I do too. I've been dying to break in all my new kitchenware that I received as gifts off of my wedding registry! Here's a very easy, healthier alternative to regular chocolate chip cookies. They taste pretty damn good too - not like some low calorie cookie you can buy at the store. Soft, gooey, and fresh!

Makes ~15 cookies


  • 1 egg

  • 1/2 cup almond butter (can use peanut butter if you aren't doing a strict paleo diet!)

  • 1 cup organic coconut sugar

  • 1 tsp coconut oil (if hardened, melt it then let it cool)

  • 1/4 cup coconut flour

  • 1 cup almond flour (I used Trader Joe's almond meal - which is also a great paleo alternative for cooking chicken parmesan!)

  • 1.5 tsp pure vanilla extract

  • 1/2 tsp baking soda

  • 1/4 tsp sea salt (+ you can sprinkle a little more on right when they get out of the oven!)

  • 1/3 cup dark chocolate chips


  • Preheat your oven to 350

  • Mix the egg, almond butter, coconut sugar, vanilla and coconut oil in a bowl (by hand or use a mixer)

  • Mix the almond flour, coconut flour, baking sode and sea salt in a separate bowl

  • Slowly mix the dry ingredients in step 3 into the wet ingredients bowl until it becomes a dough

  • Place on a cookie sheet (use coconut oil cooking spray, or a paper so they don't stick)

  • Roll the dough into small balls (should make about 15 cookies) and flatten.

  • Bake for 10 minutes
